INGREDIENTS:

 

  • 2 tablespoons olive oil
  • One onion, chopped
  • 1 carrot, chopped
  • 1 fennel bulb, chopped, plus fronds for serving
  • 2 tablespoons tomato paste
  • 1 pound peeled and deveined medium shrimp
  • 2 8-ounce bottles clam juice
  • 1 14.5-ounce can diced tomatoes
  • kosher salt and black pepper

DIRECTIONS:

 

  1. Heat the oil in a vast saucepan over medium heat. Add the carrot, onion, and chopped fennel and cook until mollified, 6 to 8 minutes. Mix in the tomato paste.
  2. Add the shrimp, tomatoes , clam juice, and their juices, and 1½ cups water to the pan. Season with ½ teaspoon salt and ¼ teaspoon pepper. Stew until the shrimp are opaque, about 2 minutes. Sprinkle with the fennel fronds.

INGREDIENTS

  • 4 large flour tortillas
  • 2 c. chopped spinach
  • 3 c. shredded Monterey Jack, divided
  • 1 tsp. Old Bay seasoning
  • 1 c. guacamole
  • 2 tbsp. butter
  • 1 medium tomato, chopped
  • 1/4 c. Chopped cilantro
  • 1 1/2 lb. medium shrimp, cleaned, deveined and tails removed
  • cayenne pepper

DIRECTIONS

  1. Preheat oven to 400 degrees F. Get Ready 2 rimmed sheet pans with material paper. Place 2 tortillas on every sheet pan. In a medium dish join 2 cups Monterey Jack cheese and spinach. Put aside.
  2. In a large skillet over medium-high warmth melt margarine. At the point when spread starts to air pocket mix in Old Bay and toss with shrimp. Sauté until cooked through and pink.

INGREDIENTS

  • 4 tablespoon. unsalted butter
  • 2 c. baby spinach
  • kosher salt
  • 1 lb. shrimp
  • 1 lemon, juice and zest
  • Freshly ground black pepper
  • 2 cloves garlic, minced
  • 3/4 lb. cooked angel hair pasta
  • 2 tbsp. chopped parsley

DIRECTIONS:

  1. In a bowl or Dish, season shrimp with salt and pepper; Put aside.
  2. In the Huge sauté pan add butter and heat over medium-low warmth. Warm until shading begins to brown, around 3-5 minutes. It will begin to smell nutty and start foam.
  3. Turn heat up to medium-high. Add shrimp and cook until pink, 2 minutes for each side.
  4. Scrape the browned bits off of the bottom of the skillet with a wooden spoon. Mix in garlic and child spinach, and toss until spinach starts to shrink. Include the pasta, lemon zest and lemon juice and hurl with tongs until everything is equally joined. Check for seasonings and add more salt and pepper, if necessary.
  5. Serve promptly.
